We recently held the Genting Culinary Classic 2025 competition which gathered talent all over the country to showcase their cooking skills. Some of the top ranking chefs have come up with their own dishes which are a celebration of culinary mastery, made with the finest ingredients and innovative techniques. 1.  Nasi Lemak Bungkus with Sambal (Chef Hans Lim Yi Han)

Dish origin: Perak
For many years, our signature nasi lemak has been the number 1 pick for breakfast at the Highlands. Celebrate the taste of home this National Day with our Nasi Lemak, the flavour that unites us all. This dish is available from 29 August to 16 September only.

2.  GCC2025 2nd place: Mee Tauhu Tawau (Chef Lo Tshun Ket)

Dish origin: Sabah
Experience an upscale, scrumptious version of Tawau’s signature beancurd noodles, stir-fried to perfection with a tofu cube of minced meat and fish on a bed of savoury broth. This dish is available from 29 August to 16 September only.

3. GCC2025 4th place: Nasi Ulam with Grilled Fish & Coconut Sambal
(Chef Ahmad Fairul Aimie Bin Ahmad Salihim)

Dish origin: Perak
This dish is remarkably plated considering the chef is a home cook who hails from Batu Kurau, Perak. A taste of the coast beckons with smoky, marinated grilled fish, butterfly pea herb-infused rice and creamy, coconut-rich sambal. This dish is available from 29 August to 16 September only.

4.  Patin Tempoyak (Chef Nor Hamizi B Sapian Suri)

Dish Origin: Pahang
Traditional Malay dish featuring freshwater catfish cooked in a rich broth using a fermented paste made from durian, along with turmeric, ginger, and lemongrass.

5.  GCC2025 Top 20: Steamed Siakap Kapitan Peranakan Nyonya style (Chef Low Wee Keong)

Dish Origin: Melaka
Remarkably, this dish was created by a chef who is completely visually impaired.
Crafted with his own creative twist, this simple and hearty dish is made using exotic ingredients such as ginger torch flower, galangal, and lemongrass. It is rich in flavours with a mix of sweet, savoury, sour, and spicy.

6.  GCC2025 Top 20: Nyonya Fried Mee Siam - Penang Style (Chef Amy Beh)

Dish Origin: Penang
You’ve probably heard of the 80-year-old veteran Malaysian celebrity chef and this is a rare chance to sample her cuisine. This is a classic comfort food boasting Penang’s rich Peranakan heritage, where tamarind, sambal, and fermented bean paste come together to create harmonious flavours.

7.  GCC2025 1st Place: Ayam Golek Buah Kulim (Chef Budiman Bistari Bin Mohamed)

Dish origin: Kedah
Treat your tastebuds to a culinary adventure with Ayam Golek, paired with fragrant Northern-style lemuni-infused rice, a refreshing herb salad, and crispy fried eggplant, all crowned with vibrant, nutrient-rich nasturtiums.

8.  GCC2025 3rd Place: Sugarcane Smoked Bidor Duck Breast With Nasi Kerabu Duck Liver Onigiri and Budu Lime Vinaigrette Ulam (Chef Lim Boon Ghee)

Dish origin: Kelantan
Interestingly, Lim is a professional chef from Penang but he decided to create this Kelantanese dish. Indulge in a gourmand-approved fusion of perfectly glazed, sugarcane-smoked sliced duck breast and aromatic foie gras-studded blue rice onigiri, accompanied with a side of Budu Lime vinaigrette herbs.
